2019 Signature Cabernet Sauvignon
Scents of spicy pepper, silky dark chocolate, jammy black fruit, tobacco and cedar all mingle together as a result of our heavy and medium toasted barrels. The wine itself is dry but full bodied. Big flavors of dried cassis, jammy blackberry and warm baking spices are dominant, and the lightly chalky, dry tannins give this expression a long, decadent finish.
Forest floor and pine needles on the nose, Overripe berries like black currant and boysenberries, with cedar, spice box and a hint of licorice on the finish.
Tasting notes
This vintage of Cabernet Sauvignon was harvested from 3 different vineyards in Paso Robles: Bianchi Vineyard, Plummer Vineyard, and Red Tail, giving it distinctively different tasting notes than previous years. Forest floor and pine needles fill the nose, giving us an impression of standing alone in a peaceful wooded area. A cornucopia of overripe dark berries like black currant and boysenberries completes this natural setting and balances out the secondary flavors of cedar, spice box and faint licorice that linger on the finish.
